Ever heard of "Mock-Apple Pie"?
It's literally pre-cooked/steamed zucchini instead of apple! (as well as various spices and extra sugar).
I shit you not, my mom once made an apple pie and a mock-apple pie, and it's 100% impossible to tell the difference based on texture and flavor. Somehow, the flavor of steamed zucchini and cinnamon actually resembles the flavor of cooked apples. Also, the skinned and diced zucchini looks like diced apple chunks, so unless you pay REALLY close attention and spot a zucchini seed in one of the chunks through all that glaze, cinnamon, and the distorted surface of the veggie chunk, you can't tell.
One last fun fact: the steam-cooked zucchini actually retains moisture better, so it has a less rubbery texture than cooked apple, and the finished product comes out better than actual apples!
