The original Z anime definitely improved over the manga in most ways. I just kept noticing all the removed stuff that we consider legendary in DB culture, but it wasn't in the edit because it was added by Toei. A lot of why DBZ was so beloved were anime original additions.
And yes, the power up scenes are dreadful. But comparing manga Piccolo vs Frieza for example to the anime version? Anime wins by a landslide, it made it one epic clash and extended it even after Frieza transforms.
Same goes for Vegeta vs Frieza, the scene of Vegeta shooting hundreds of ki blasts while Frieza just flies around or Frieza eating a crab were filler but are the parts I remember the most about their battle.

If someone today wants to get into DBZ and be on the same knowledge level as us, know why that anime AND CHARACTERS were so beloved, they better watch Z because half the things people tend to talk about were anime original.
Gohan's adventures in the desert are another fond memory of fans, 100% absent from the manga and it's what adds a lot value to Piccolo's sacrifice, hell, the entire year of training of the humans is their characterization so you feel bad when they still die to the Saiyans.

NEARLY ALL OF PICCOLO VS 17, THE BEST FIGHT IN DBZ, SPECIFICALLY WHEN THEY START REPEATEDLY PUNCHING EACH OTHER'S GUTS STRETCHING LIKE RUBBER, THAT WAS ALSO FILLER. Seriously in every saga some of the best moments people mention as favorite parts today weren't by Toriyama, but this isn't an attack to him, manga just can't spend as much time depicting choreography or doing characterization, meanwhile the anime wanted to add padding.
