That moment symbolized his own departure to Fate, it was his goodbye to servants, goodbye to Fate in general, an ending.
Your servant still gets a shining moment facing an evil god, crossing the universe with the power of love, saving the world, etc in the true end, the only difference is they aren't the one you end up with.
