This means you do not "slide" between sexes, you either have the characteristics of a sex or you don't. Characteristics include anatomy and role, whether you are capable of successfully carrying out the role is unimportant, it just matters what you're equipped for. Having one sex automatically excludes you from the other, they are defined as a binary set.

They can't be male because they possess exclusively female characteristics, and they cannot be female because they possess exclusively male characteristics, ergo they cannot be male OR female. Yet despite this, they can carry out the sexual role of a male or female with either male or female. QED they are a third sex.
Just because you choose to ignore their actual sexual dualism and read them as purely male or female depending on the scenario does not make them male or female.
