Partially due to Japan wanting to find exotic names for deities and the Greek myths being so well recorded and preserved. Plus, the USA has a significant amount of Greco-Romanism in its roots. You'd never find a Bible in a public school, but growing up, I was always able to find a book on Greek myth.
You might have an instinct to brush off Japan for its contribution, but video games have a larger cultural impact than you'd think. My first exposure to Japan was through video games, and that lead to me knowing a fair bit about its culture, norms, mythology and so on, just be having a singular thing to look into.
Plus, Greek gods were hyper bullshit-tier strength in their own myths. Asian and Nordic gods (among the majorly known/popular myth-groups) can be injured and killed. Greek gods require Tartarus to indefinitely incapacitate, because they heal from every bodily harm done to them. From the Titanomachy throughout the end of recorded Greek myth, Zeus never suffered a significant loss. Ares got chopped up into pieces like a bitch, but that's not important for Zeus and his older brothers.
