The fact that he gets no satisfaction fighting Apostles is what throws it all off. He is searching for the near impossible task of a human that can challenge him when is one of the most power apostles known. In hundreds of years he is only found 3. It's arguable that griffith was protected by fate and if not he's off the table now anyway. Skull Knight probably wasn't human when he met Zodd iirc the fall of his kindgom was a 1000 years ago and Zodd has been patrolling battlefields for 300. Guts is an anomaly that everyone agrees should have died long ago. The closest explanations we got is Skull Knight's comments about him being born from a dead woman.
