Because having a legal entity behind the project helps us avoid getting our ass kicked by the IRS or other law institutions.
That and Snowpity, Inc. has been created in part for helping out board projects just like this.

As stated above, the excess will be used in accordance to the mission statement Snowpity, Inc.
The mission statement revolves about supporting horses in need, meaning collection and donation of money to organisations like Days End to help out horses.
To accomplish this, there are some costs that Snowpity, Inc. has to carry to be able to do exactly that.
As previously stated, while Lunar and me were working alone we were going to donate the excess to Days End.
The question stands now, would people be willing to support Snowpity, Inc. to perform their goal of money collection?
This will potentially give us the chance to make even more money to donate for a good cause in the future.
As I stated above, nobody involved with Snowpity is going to get ANY money, all the money goes towards our mission statement.
If people don't want that, we'll donate the money to Days End as previously planned
