I mean, yeah, cool, talk about headcanons. That's part of what we're all here for. Just don't pretend they're something other than what they are.
As for the actual show, at a certain point we have to accept that pony physiology is fairly divergent from something actually akin to real world equine. Too much magical hoof grip, too many postures that no actual horse could actually adopt without dislocating joints, much less casually.

Of course, in actuality this has more to do with snout length (and our miniature equines definitely have less snout than a lot of animals). And it's a bit ironic to use here, because ungulates are one of the notable groups, other than some primates, to chew with their mouths closed.
