The movie satisfyingly utilized the rainbow as a symbol of unity, and the wing and horn magical constructs Sunny gets makes her emblematic of what an alicorn represents - all three kinds of ponies together as one. The magical constructs fade by the time morning comes around, just like the magic aurora which lit the night sky bright as day, and the rainbow streak in her mane remains as a magical brand representing the unity she brought to Equestria.
I wouldn't be surprised if Sunny's temporary alicorn form is able to be activated in the future by channeling the bonds of friendship between herself and the others, and I'd even be glad to see it like that if they decide to bring it back in the show.
