if you read all the passages you realize its talking about sanitation practices and even has quarantine practices for people who are unclean to stay in their house and not have contact with anyone.
traditionally pigs were fed garbage and other questionable things. pigs eating parasite infested meat in turn caused their meat to carry parasites. thus why old people have a need to cook pork to burnt rubber, to kill the parasites at 165 degrees F. people continued feeding pigs food scraps and garbage until the 1930s or so when factory farming took off and people fed pigs a diet of strictly plants and no garbage, and subsequently the amount of people contracting cases of parasites from pork declined to almost zero cases per year.
in poorer countries the pork could still be suspect and you could fall ill to parasites if its improperly cooked
of course a lot of Christians do not fully read the Bible, but simply memorize verses and sing, you can't expect critical analysis from literal sheeple who are guided by faith.
I as a Christian eat a lot of undercooked meat without concern because I know it's illegal to sell contaminated meat and I get a fat lawsuit if I get sick
