In many cases you can just use common sense to extrapolate how it should work (e.g. a quadruped has no hands and can't use weapons), but in others it won't be clear.
The best solution is probably to use the DFRPG monsters book, which contains rules for most of the unusual traits. Note that the monsters in that book are relatively powerful, being intended to challenge 250 point heroes!
Alternatively, just treat goblins, orcs, etc. as humans with adjusted ST and IQ and traits from Lite such as Appearance (Ugly), Night Vision, and Bad Temper.
