It's curious that Pinkie Pie should remember Rarity less favorable than Rarity remembering Pinkie Pie. The latter believed she was playing along more than the former did. Guess the cucumber sandwiches made quite an impression on the party planner. Hopefully after making up, they were able to reconcile their points of views. And not involving their pets again unless it's for fun!
The Last Laugh is the only episode so far that feels like a proper send-off for the character it involves. Everybody else except Rainbow Dash blew their load in S7: Fluttershy with Fluttershy Leans In, Rarity with Filly Forever, Applejack with Perfect Pear. Obviously Twilight's big send-off was always going to be the series finale.
I think you could fix all the problems with the series if you put The Last Laugh in S7, put a better episode about Scootaloo's parents in S7 that would also serve as RD's big send-off focusing on her sister-like relationship with Scoots, and then replace the pony of shadows with Grogar teaming up with Tirek and Chrysalis and merge that plot with Starswirl returning.
I wish Pinkie took control of the factory though, it seemed like she genuinely enjoyed inventing and didn't care that she didn't get to see others laugh right at the moment.
